Captain Bob Earl attended a seminar sponsored by N.C. Marine Biologists in conjunction with a panel of Blue Fin Tuna buyers.   The problem under consideration was scrombrotoxin poisoning, also known as histamine poisoning, resulting from present methods used during the handling process.  During the struggle of the catch, toxins (lactic acid) are released into the flesh of the fish and the core temperature of the fish rises as a result of this. The buyers want the flesh cleansed of these toxins and the temperature reduced as soon as possible.  The old method of instantly icing the fish allowed the core temperature to remain high because the toxins remained.  Eliminating the production of this natural poison would secure the best quality (and thus most valuable) meat at market.

 

 

 

Captain Bob found the solution to this problem by applying a new spin on another product he developed in his shop.  The Blue Fin Tuna Swimming Hook evolved from a Tarpon Gaff that Captain Bob originally designed and built for renowned Boca Grande tarpon guide and tarpon tournament champion, Captain Robert McQue.  In that situation, the fish was kept alive and secured in the water for the live weigh-in and promptly revived for release by swimming and maintaining its health.  The Blue Fin Tuna Swimming Hook was built from this idea, but its objective is to bring to market the highest quality meat by securing the fish alongside the boat where it can swim until its flesh is cooled by flushing out the toxins.  Swim your tuna until it lights up - then dispatch your catch for a greater profit at market.
